Keeping It Real: Chuck everything in salad

Today is less of a recipe, more of a philosophy. A rough method, if you will.

Long time readers will know of my intense hatred of food wastage. Yes, hate is a strong word, but in this context it is warranted. I absolutely can’t stand allowing food to go bad in the fridge – it’s the reason why I keep my fridge well organised and clean pretty much all the time.

My favourite way to use up bits and bobs from the fridge and pantry is to make a salad. A chuck everything in salad. (more…)

Think outside the potato square today and make yourself a crunchy snack that is not only delicious, but a big ol’ serve of green veggies too.

Afterwards, pat yourself on the back and grin like a cheshire cat. OK, maybe you’re not a drama queen like me, but you can certainly feel good about yourself! (more…)

Meanwhile, Australia’s long hot Summer continues and I’ve been busy in the kitchen with the King of Summer fruit – Mangoes. The sweet, silky flesh of ripe mangoes is the perfect partner in this rich, but fruity dessert. It’s a cracker served after a spicy meal. (more…)

This is how I have to eat a lot of the time these days.

Classy, I know.

If you look closely you can also see egg yolk dripping down my arm.

Really classy, I know.

But I’ll tell you what, it was worth the sticky egg stains. That was one of the best bacon and egg rolls I’ve had up here in the Northern Rivers.

It’s from a brand new cafe called The Belle General at Shelly Beach in Ballina, and it’s got me salivating to get back and eat the rest of the menu! (more…)

Christmas pancakes

Yep, I’m giving everything the Christmas makeover at the moment. I just love helping you prepare for the festivities!

First there was the chilled dairy free eggnog, then a delicious rolled turkey breast with cranberry couscous stuffing and most recently, some delectable christmas cake brownies (yum, yum, double yum!).
